  1. Start with mascarpone cream. Add three egg yolks, a ¼ cup of sugar, and a teaspoon of vanilla. Whisk these ingredients over simmering water for 8-10 minutes, gently and by hand, until the mixture is cooked.
  2. Continue by adding a cup of naturally sweet mascarpone cheese.
  3. Afterward, whip two egg whites and combine them with mascarpone cream. This way, the cream will get a fluffier texture.
  4. The next step is preparing coffee syrup made from half a cup of warm espresso or a strong brewed coffee, a tablespoon of sugar, and three tablespoons of sweet liquor, like Marsala wine or rum. You can use tongs to dip ladyfingers into the syrup since this later makes them easier to handle.
  5. Quick dip the ladyfingers into the coffee syrup and lay them in a casserole dish. Apply a layer of mascarpone cream. Repeat this step one more time.
  6. For the cake to be complete, add some whipped cream at the top of it and generously coat it with cocoa powder.

A Few Useful Notes When Making a Tiramisu

  • To achieve a consistent, darker color of mascarpone cream, use a vanilla extract over fresh vanilla
  • To avoid curdling of mascarpone cream, let the eggs and the mascarpone cheese sit out for about twenty minutes before preparing the mixture
  • To elude overbeaten cream, use cold whipped cream and stir it slowly by hand or with an electric mixer
